Ok so these have become a staple in my house…. My kids seriously cannot stop eating them! They make a fantastic snack on the go, or little treat, or hell even breakfast! I make them at least once a week and today finally caught some photos of Story stuffing her sweet little face!
I make these muffins with really whatever I have on hand, so the recipe is versatile :) Ill try to add in the ingredients you can sub, or that I have used and have worked… But here was todays version!
Grab a blender and to it add 2 Cups organic oats- Blend into flour then set aside in mixing bowl. (I have also used organic and whole wheat flour)
To the bowl, add 1 1/2 tsp baking soda
1/4 C flax meal (I use a mix of flax and chia)
3/4 C Organic sugar (today i used light brown, but coconut works well too!)
stir up with a wooden spoon…
Then grab your blender again!
Throw in 2-3 spotty ripe bananas
2 handfuls of organic, fresh baby spinach
1/4 C organic coconut oil
splash coconut or vanilla extract
1/2 cup almond milk
Blend to smoothie consistency, then add to mixing bowl with dry ingredients! Just stir till combine… Scoop into muffin tins (I grease mine with Earth Balance or coconut oil) and bake at 350 for about 18-20 mins, till wooden pick (chopsticks are what I use to test ;)) comes out clean!
Thats it… These are so great for your kiddos, especially if you have a hard time getting then to eat greens! Spinach is POWER so we call them Hulk Muffins!
